ACC Culinary Competition

Parade College has taken out the 2022 ACC Culinary Competition. Parade edged out Whitefriars College and Mazenod College to claim this year’s title. All schools that were represented cooked up a storm, producing high quality dishes that impressed the judges. This year we were lucky to have judges from the Australian Culinary Federation (ACF) to help decide the 2022 champion. The event was held at Parade College this year. The hospitality from the staff and students was outstanding, making all that were involved feel at home. A big thanks to Parade for a fantastic day.

Below are team photos along with the dishes that were cooked up on the day. Each team cooked a main course and dessert. The criteria for this years competition was for teams to include five seasonal ingredients with full creativity of each team .

Lamb backstrap with a chicken and spinach mousse , served on a sweet potato mash and glazed seasonal vegetables and a red wine, port reduction sauce
2022 Champions – Parade College
Chocolate mousse served in a white chocolate cup with a raspberry coulis and honeycomb crumble
Roast Quail with chestnut, bulgur and pomegranate salsa
2nd Place – Whitefriars College
Pears poached in red wine and vanilla custard
Parmesan and herb crusted lamb fillet with mashed potatoes, pea purée, roast butternut squash served with a red wine jus
3rd Place – Mazenod College
Chocolate and peanut mousse with strawberry and rhubarb compote, chocolate crumb, candied peanuts and honeycomb
Roast pumpkin and ricotta ravioli served with creamy mushroom sauce, roasted tomatoes, rocket oil and parmesan crisps
4th Place – St Bernard’s College
Apple crumble pie with olive oil pastry served with freshly squeezed apple granita and Greek yoghurt ice cream and honey drizzled fig
Chicken wrapped in pancetta with char grilled veg on goats cheese cream
5th Place – St Joseph’s College Ferntree Gully
Orange and Chocolate self severing pudding with caramelised Fig and Chantilly cream
